Our Go-To Meal

We LOVE Mexican food!  We eat tacos or quesadillas about once a week.  That doesn't include the leftovers.  We have a recipe that we use for our tacos and quesadillas, and trust me, it is YUMMY!  I don't measure, so you'll have to adapt to your taste.  I put approximate measurements below, but we're always changing it up to how we like it.

Ingredients:
1 - 2 Tbs Olive Oil
1/4 cup Onion
2 Garlic cloves - minced
1/2 - 3/4 cup bell peppers - any color
1/4 - 1/2 tsp red pepper flakes
1/8 tsp cayenne pepper
1 lb. ground turkey
Taco seasoning
1/2 - 1 cup of salsa - we used medium salsa
1 can of corn - drained
1 can of black beans - drained

1. In large pan, heat oil, and sauté onion, garlic, and bell peppers until soft.  Add red pepper flakes and cayenne pepper.
2.  Add ground turkey and cook through, adding taco seasoning during the cooking process.  (We buy our taco seasoning in bulk from Costco, so I really don't know how much you should add.  Add a little, and once everything else is added and cooked, taste to see if you need to add more.)
3.  Once turkey is browned, add salsa, corn, and black beans.  Heat through.
4.  Once these are hot, you are ready to eat!!!

We like our tacos on soft white corn tortillas with some sour cream, lettuce, avocados, and cheese.  Jeff likes to add cilantro and hot sauce to his.

We like to use this mixture in quesadillas as well.  We take a whole wheat tortilla, add some cheese and some of this taco mix to half, and fold the tortilla in half.  Cook until cheese is melted and tortilla is starting to get golden brown.  We like to dip ours in sour cream and eat with avocados.

Jeff also likes to eat this mixture over tortilla chips and make nachos.  Or, he just scoops it up with a chip and eats it.  I've even had it on salads.  It's delicious any way you eat it!!!  And, it makes a ton so you have lots of leftovers to enjoy!
